Vegan rice biscuits
Ingredients300 g rice flour
100 gr of sugar
120 ml of water
60 ml of sunflower seed oil
1/2 sachet of yeast
PreparationPour the rice flour onto a pastry board and create a fountain in the centre. Add the grated zest of the lemon, the yeast, the sugar and mix the ingredients well. Add the seed oil and the water a little at a time and start kneading from the centre until a compact and homogeneous mixture is obtained. Cover the dough with a sheet of clingfilm and place it in the refrigerator to rest for 1 hour.
Roll out the dough with a rolling pin to a thickness of approximately 3 millimeters. With the help of a mould, cut out the biscuits and place them on a baking sheet lined with baking paper.
Bake the biscuits in a hot oven at 180 degrees for 15 minutes. Once out of the oven, let them cool and sprinkle with powdered sugar.
